Ok…I have all these fresh peaches/nectarines and had no clue what to make. So I googled a couple of recipes and everything seemed to complicated or i didnt have all the ingredients. So this is what i came up with:

Cover the base of a round pie dish with store-bought pastry, brush with a ‘paste’ made of 1/4 cup of melted butter, 2tblspn of sugar and 1 tspn of fine cinnamon.

Make  a thick custard – 4 tblspn custard powder, 3tblspn sugar mix well with a little milk, add this to a boiling 500ml milk.

Allow to cool completely. Slice 4 peaches and toss with 2 tblspn sugar and a tspn cinnamon.

Bake the pastry on 180 for about 15min.

Once everything has cooled, add the cooled custard then the sugared peaches. Take the leftover pastry and cut strips and place across the peaches, brush the top with some melted butter and bake for 20-30 min at 180.

Optional when it comes out the oven brush with some sugar/butter/cinnamon paste.

Serve with fresh cream!!

Happy Eating :)
